It’s that time of year already! Pumpkin everything, candy galore, and cooler weather. Sigh…who doesn’t love fall? Seriously, have you ever met a person that said, I HATE FALL! Probably not.

 

Fall ushers us into seasons of celebration. It’s like the opener for a great concert. It’s good, really good and full of amazing things, but it’s also a preview of the times in the year we like to make the most memories, and after the year we have had, we all need some good memories!

 

September 22nd marks the first day of fall in 2020. So let’s bounce a couple of ideas around to make this fall a memorable one!

 

While we can’t ignore the fact that the kids may not be knocking on doors for candy this year, we can think ahead and come up with fun ways to celebrate at home. One way is to get the whole family involved and have a themed dinner with everyone dressed up in costumes. Another is to hide candy around the house. You get to make the rules, just make it fun!

Let’s talk pumpkin. This is serious business, there are pumpkin lattes, pumpkin donuts, and a number of other treats that will expand your waistline. But there are also a variety of ways to incorporate pumpkin into a dish and keep it healthy.

 

Pumpkin seeds are an all-time favorite! This small food is packed full of nutrition including healthy fats, zinc, and magnesium. Pumpkin seeds are also full of antioxidants that help reduce inflammation.

 

Pumpkin can be added to your breakfast, snack, lunch, dinner, or dessert. This recipe is a great example. You can have this for breakfast or even dessert.

 

 

Healthy Pumpkin Spice Yogurt Parfait

 

Ingredients

 

  • 2 cups vanilla Greek yogurt, divided in half
  • 2 Tablespoons of pumpkin puree, not pie filling!
  • 1/2 teaspoon pumpkin pie spice, divided in half
  • 3/4 cup of crumbled graham crackers, oats, granola, etc.

 

Instructions

 

In a small bowl, combine 1 cup of vanilla Greek yogurt with the pumpkin puree and half (1/4 teaspoon) of the pumpkin pie spice. In a separate bowl, combine the remaining 1 cup of yogurt with the remaining pumpkin spice.

 

Assembling the Parfait

 

In a small glass, layer the vanilla yogurt, then the cinnamon granola (or filling of your choice) then the pumpkin yogurt, then another layer of the granola. Top both glasses with remaining vanilla yogurt. Sprinkle some cinnamon on top if you’d like!
